Walk into the kitchen. The scale, the pour-over kettle, the filter paper, the grinder—they sit quietly on the counter, like old friends.
Weigh the beans. 18 grams. Not too much, not too little.
Listen to the grinder crushing the beans—that rough, solid crackling sound, like stepping on autumn leaves. The aroma bursts open in that instant—nutty, dark chocolate, with a hint of citrus brightness.
Heat the water to 92°C. Not too hot, not too cool.
First pour—blooming. Watch the coffee grounds puff up like a tiny, fluffy volcano. 30 seconds. Do nothing. Just watch it breathe.
Second pour—a thin stream spiraling down, as if writing on paper. The coffee drips into the server drop by drop, amber and translucent.
Third pour—a bit more water, releasing the last of the flavors. The whole kitchen fills with that scent.
Take the cup to the window. Don't rush to drink. First, watch the steam rise and swirl in the light.
The first sip—hot, with a light bitterness and an acidity that feels like a gentle hand patting your tongue. Then comes the sweetness—long, quiet, lingering.
This morning has no "drink it while it's hot," no "finish up and head out." Just coffee. And you.
